Neopolitan Cookies

Here is another addition to our Christmas Cookie Party. These took a little more time to prepare, but they really came out Yummy. The Recipe Comes from "Mennonite girls can cook", And can I say, I really like this blog. I have seen some very great recipes, and so many of them are easy to make. They have all kinds of things to choose from. Check them out..

2 1/4 cups flour
1/2 tsp. baking powder
1/8 tsp. salt
1 cup butter
3/4 cup sugar
1 egg
1 tsp. vanilla
1/4 cup red maraschino or glazed cherries, chopped
1/4 cup green maraschino or glazed cherries. chopped
1/4 cup finely chopped pecans or walnuts
red and green food colouring
Sift together flour, baking powder and salt.Cream butter, sugar, egg and vanilla.Blend in flour mixture.Divide dough into 3 equal parts.Add red food colouring and the red cherries to one part, blending well.To the second part, add the green food colouring and green cherries.To the third part, blend in the chopped nuts.
Wrap each portion up in plastic wrap and chill for about 1 hour.Divide each colour dough into 2 parts.On waxed paper, form a 10-12 inch-long log of one portion of the red dough and then flatten to about 1/4-1/2 inch thickness.Repeat using the green and white doughs.


Stack the white dough on top of the red and then add the green layer (see picture below).Wrap with waxed paper, squaring up and smoothing each long side as you wrap it.Repeat with the remaining dough.Chill logs about 4 hours or overnight.


Unwrap log and cut into1/4 inch slices and place on cookies sheets.


Bake at 350 degrees for 10 to 12 minutes - just until the edges begin to turn a light brown.Remove from cookie sheets to a rack or brown paper and let cool.These keep well in a tightly closed container stored in a cool place.

Oreo Truffles

I made these for our Christmas Cookie Party. I got the recipe from Kraft. Ive seen them on other blogs, and decided to make them myself. And they were great!! Everyone really liked them. I made the regular ones, and then I also made some with the white oreos. They both came out really good. I will for sure make these again!


This is the cookies all crushed up, being mixed into the Cream Cheese!

After mixing it all, I made the balls and then put them in the Freezer to get hard, before I rolled them in the chocolate.

They looked really good in the white chocolate.


But, I went ahead and added color. I have to work on my "Drizzle" thing!

Christmas Cards 08

Here are a few Christmas cards I made to send out. My cousin had a card making party, and these were the ones I came up with. I always wish I had more time to sit and make more, but with 4 children running around. I have to constantly get up and make sure they aren't eating glue! But I love how these came out. I think this year, I will start making these on my own, and sooner, so that I have plenty of time to make all that I need.


HAPPY NEW YEAR!!

Ok, so its the 8th and the New year has already started. And since so many days have passed, you can tell Im busy. The biggest thing Ive got going right now is committing to lose weight. Ive been setting up menus and researching to get us on this horse! It will cut down on my baking.. but Im going to still keep it open. I dont usually eat all that I make. I will make cupcakes, and eat only 1 out of the whole batch. But my hubby will have 3 or 4 and since this weight loss goal is for him too. Im going to find something less sweet to work on. Im looking into a sewing machine! Hopefully I can start on sewing. And this will start another year where Id like to make more time to scrapbook. Also, we will be moving in a few months, so that will be taking up some time. This is an exciting year!! Lots of things to happen. First off, Ill be posting some make-up posts, and then Ill start on the new year!!
